Diospyros kaki, the most widely cultivated species of the genus Diospyros, is among the oldest plantsin cultivation, know for its use in China for more than 2,000 years. The fruit is sweet and slightly tangy,with a soft to occasionally fibrous texture. In many cultivars, known as the astringent variety, the fruithas a high proanthocyanidin-type tannin content which makes the immature fruit astringent and bitter.The tannin levels are reduced as the fruit matures. It is known that the content of proanthocyanidin ishigher in persimmon peel than in persimmon pulp. Persimmon contains a number of compounds such as sugars, terpenoids, carotenoids, flavonoids,tannins, naphthoquinones, amino acids, minerals, and lipids. Anti-oxidant activity by terpenoids,carotenoids, and flavonoids found in persimmon is well documented. According to scientific research,proanthocyanidin in persimmon has potential to retard aging by protecting from DNA damage.Moreover, there is a scientific study proving that polyphenols isolated from the persimmon leaf showskin whitening and anti-wrinkle properties by inhibiting enzyme activity.
